Both dried and fresh ginger come from the underground stem (rhizome) of the ginger plant. As the rhizome matures the flavour and aroma intensifies, ensuring the dried, ground spice delivers the optimum fragrance, taste and pungency. Ground ginger is a more convenient form of ginger to cook with and has the added benefit of withstanding higher cooking temperatures with no effect on the flavour.
